Green Tomato Jam Recipie

Ingredients:

  • 4 Cups Shredded Green Tomatoes

  • 4 Cups Sugar

  • 6 oz of Raspberry Jello Mix

Makes approximately 4 Pint Size Jars

Smaller batch-

  • 2 1/2 Cups Shredded Green Tomatoes

  • 2 1/2 Cups Sugar

  • 3 oz of Raspberry Jello Mix

Makes approximately 2 Pint Size Jars

Instructions:

1. Fill stock pot full of water to top rung. Place on stove and begin to heat water to a boil.

2. Once stock pot is heating up, fill blender or food processor with green tomatoes and chop/blend tomatoes until desired consistency for jam.

3. Measure out 4 cups of shredded tomatoes into a pot and add 4 cups of sugar. Mix well.

4. Once tomatoes and sugar are brought to a boil, cook for 15 minutes.

5. Reduce heat to low and add your desired jello mix. Mix well.

6. Continue to cook for an additional 10 minutes and stilt very frequently.

7. Pour jam into sterilized canning jars.

8. Wipe jar rim clean and add tops on. Do not tighten the lids too tight, keep lose. Use the same tightness you would turning off a bathroom faucet.

9. Carefully add filled jars into the boiling water bath for 15 minutes.

10. Remove jars and leave to cool for 12-24 hours to allow your jam to set up, then enjoy!
